Satsuma Tsukasa Gold (Sweet Potato)

Created for the company Asahi, Satsuma-Tsukasa is an honkaku imo-shochu. Made from sweet potatoes of the Kogane Sengan variety and white koji, it is distilled on Kyushu Island in Kagoshima Prefecture. Onctuous and herbaceous, it is marked by aromatic notes of flowers, but also earthy notes of sweet potatoes cooked well.

Shochu is a distillate with a range of 18-45%, most often around 25%. Unlike vodka, it is not an alcohol necessarily distilled to a great extent, but on the contrary a brandy made to restore the qualities of its raw material: sweet potato, wheat, barley or rice mainly whose sugars have been simplified under the action of "Koji". All our shochus are "honkaku shochu", that is to say the products of a simple distillation in stills of ironing style. We consider that they are superior to "otsurui" which, themselves, are distilled in column stills and in a much more industrial way. Like malt whiskeys, there are "singles" and "blends": Satsuma-Tsukasa comes from a single distillery and is made from sweet potatoes.
